Tahini dressing

This recipe is taken from the book “Plantebaseret gourmet” (Plant-based gourmet) by chef Neel Engholm. This book is a great book to purchase if you are interested in how to make your regular vegan meals a little extra special, or you want to up your game in cooking. In this book, Neel really shows off what whole foods can, and how you can turn your simple vegetables into delicious meals, dressings, and snacks to cook for family and friends. 

Tahini is butter or pastes made from sesame seeds. The seeds are blended until a smooth consistency, this happens because the seeds release oil. Tahini is often used in the making of hummus or like here as a dressing.

Ingredients:

175 g tahini

2 1/2 dl water

2 tbsp. lemon juice

1/2-1 tsp. salt

Instructions:

Combine all the ingredients in a shaker, and shake heavily until you have a nice white dressing. Start with 1/2 tsp. salt and add to taste.
